Sizzling Garlic Beef - A success!

So tonight we had Sizzling Garlic Beef for dinner. It was freaking awesome! Even the kids ate it! Usually any meal that involves rice result in them having a tin of Tomato & Onion Tuna mixed in with boiled rice. They love it. Very Very cheap and easy dinner. Anyhow, tonight they ate the garlic beef which i was stoked about!

The recipe is:

500g beef, cut into thin strips (i just bought the prepacked thing from Coles)
1 tablespoon dark soy sauce
3 teaspoons corn flour
1 teaspoon sesame oil
1 teaspoon cracked pepper
2 tablespoons peanut oil
1 onion, halved and cut into wedges
3-4 garlic cloves (i used 2 big, 2 little)
1/3 cup spring onion, sliced
1 bunch Broccolini, cut in 4-5cm bits
200ml Masson beef style stock (its a beef flavoured vegie stock that comes in a cube)
2 tablespoons Kecap Manis (Sweet soy sauce)

Steamed or fried rice to serve

directions below (copied from taste website, i altered the recipe slightly to suit what was in my pantry)

  1. Combine the beef, soy sauce, cornflour, sesame oil and pepper in a large bowl.
  2. Heat 3 teaspoons of the peanut oil in a wok over high heat until just smoking. Add half the beef mixture and stir-fry for 1-2 minutes or until brown. Transfer to a heatproof bowl. Repeat with 3 teaspoons of the remaining oil and the remaining beef mixture, reheating wok between batches.
  3. Heat the remaining oil in the wok over medium-high heat until just smoking. Add the onion and stir-fry for 2 minutes or until soft. Add the garlic and half the chives and stir-fry for 1 minute or until aromatic. Add broccolini and stock and stir-fry for 3 minutes or until broccolini is bright green and tender crisp. 
  4. Return beef to the wok along with the kecap manis and remaining chives and stir-fry for 1 minute or until mixture boils and thickens. Serve with steamed rice.

My fried rice is basically steamed rice, bacon, egg and spring onion fried up with kecap manis. It's yummy as!!!!

Hubby went back for seconds (Which he NEVER does, esp with stir fry meals or anything that involves rice). I told this kids "that is one of the better meals mummy has cooked, so you need to eat it" and Hubby yelled out "No." I walked out confused and he told me it was the best meal i have ever cooked and we need to have it again!

So you can expect to see this one in the meal plan again. I was disappointed there wasn't any left for lunch tomorrow!

Is it really February already???

Hello! How are we all this fine day?
No promises as to how much sense this blog will make... I have been to the gym and didn't sleep as much as I should have last night.... But here we go anyhow!

So my aim for 2014 was to budget better! So far, it's going ok. Not great, but OK. But I am getting on top of spending less at the supermarkets.

In an attempt to do so, whilst coles were offering their Free online delivery for first order, i thought I would finally bite the bullet and do some online shopping!
So this weeks meal plan is:

I usually make chicken bacon feta and baby spinach pizza for myself and the children. Hubby usually has vego pizza. (It is assumed you have flour, yeast and water, if not add them to the list!)

Day 4: Make to your own liking!

Day 5: Brush the pork with kecap manis and cook to your liking. I mash cooked sweet potato with no other additions. and steam the beans... mmm mmmm!

Day 6: As per packet directions! Get creative with salads if you wish!

Day 7: Again make to your liking. Sometimes i crumb the chicken for a change.... some times i dont :)

Anyhow!!! To say that i am nervous about my pending delivery is an understatement.....

So the savings aren't massive, but i try not to concentrate on specials as i find it makes me spend more! And i figure by not really using particular items that are on special, the meal plan should suit whereever you shop!
